Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Southwest Turkey Burgers with Roasted Tomatillo Salsa Verde and Bacon Cheeseburger Potato Skins!
Oh Sunday how I love you and how I hate you. You signify a day when I’m “supposed” to sleep in and rest (though let’s be real, that never happens because I always have 114 things going on at the same time). But then you signify that I have to go back to work tomorrow. I used to think Sunday’s were the best but I’ll be honest I’m re-thinking that logic. It’s your last day to sleep in and you have to work the next day. I’m thinking Friday nights are the best time of the week. Think about it – for most of us it means you have 2 “free” days where you can do what you want. Right?
Yeah, that doesn’t happen either. LOL Ahhhhhhhhhhhh this whole being an adult is not all it’s cracked up to be. Kids if you can’t wait to grow up and be an adult, trust me, stay a kid as long as you want. This adult thing is kinda hard. It’s stressful and can be taxing at times. Sure we get to do “funner” stuff in your eyes – stay out all night, party with friends, vacation, buy as many animals as we want. But here’s the truth – staying out all night isn’t want it’s cracked up to me. You may not be able to sleep in the next day and most people cannot function on a few hours of sleep. Then if mix in adult beverages you will probably feel yucky. Next vacations – oh sure they are awesome BUT you have to work, work, work to pay for them. And the animals – now truth be told I had about 3 cats, 2 pigs and a dog right now if I could but the issue is – SOMEONE has to take care of them, pay for their food, clean up after them. It’s a lot, A LOT of work.
So yeah, stay a kid as long as you can – color on the floor, play with your dolls, and just enjoy your family and friends.
So last week work-wise was ROUGH but honestly it’ll be like that for the next few months. However I did get some good news – I’m going to be working from home pretty much full time starting next week. My commute right now is about 3-4 hours a day with just “normal” traffic. Since my group is relocating to another building it was going to add on another 40-60 minutes to my commute thus giving me a 4-5 hour daily commute. Thankfully my company cares about their employees and offered me this option. Honestly, not many companies these days would give 2 cents about an employee but the company I work for, they do.
Today is recipe day in the kitchen. I’m working on a Honey Balsamic Slow Cooker Chicken thighs recipe in my Brod & Taylor Folding Proofer & Slow Cooker. I’ve had a folding proofer for years and LOVE IT! It’s the best when it comes to proofing dough! But recently they came out with a new model that also handles slow cooking! I’m super excited about that! Also today I’m working on a new pizza that is totally going to blow your mind! Here’s a hint – it’s NOT with pizza dough either but instead it’s going to have a …. well you’re just going to have to wait and see now won’t you.

My Fantabulous loved it so much that I had to make a 2nd loaf 2 days later!
And then I shared this – those ‘strings’ well those are gluten strands. When you see that in dough, it’s a good thing! A very, VERY good thing!
