So I am super ridiculously excited to share with you the new cereal flavor from Post cereal. We’re talking Cinnamon PEBBLES™! It is a crispy cereal with the perfect combination of cinnamony sweetness. It’s the latest way for PEBBLES™ to make your mornings rock. And let me tell you what, it totally rocks!
Now what I wanted to do with these seriously delicious little pieces of numiness, other that legit get my biggest mixing bowl to have one epic bowl of cereal, was transform it into something spectacular…and portable!
When you start the day with the full-blown flavor of PEBBLES™ cereal deliciousness happens! Whether it’s Fruity, Cocoa, and one of their special limited edition flavors they have been making mornings more fun for kids and grown-ups alike for over 40 years!
What I wanted to do was not just make your everyday cereal treats but take them a step further well because, that’s kinda what I do. That’s where these churro bars come from. If you’ve never had an authentic churro you’re missing out. They are crispy little logs of fried dough that is dredged in a cinnamon sugar mixture.
I can remember the first time I had one. I was 13 years old and a brand new mall opened up in my home town. So like every other 13 year old teenage girl Friday nights were spent cruising the mall for boys, food and clothes. While I was with my girlfriend hitting up the stores we stopped at this new kiosk that were serving these longs ‘rods’ of dough all coated in cinnamon sugar. These things were incredible and truly addictive.
And that started my love/mild obsession with churros. Every Friday night it was an orange drink, a churro and scoping out the cutest boys while drooling over the latest Jordache jeans (yeah I just dated myself).
So when Cinnamon PEBBLES™ was looking for some recipes that took the cereal beyond the bowl I knew exactly what I wanted to make. Yep you guessed, churros….but with a twist. There was no dough and they weren’t deep fried.
On my next shopping trip to my Super Walmart, I picked up a box of these little gems plus a box of Post’s new Honey Bunches of Oats Pecan® & Maple Brown Sugar, as well as a bag of Malt-O-Meal Frosted Mini Spooners. The old Pecan Bunches got a new flavor overhaul as it’s now sweetened with maple brown sugar. We’re talking yum! It contains wholesome pecans, crispy flakes, crunchy oat clusters, brown sugar and maple taste. What I love about the Malt-O-Meal bagged cereal is that it combines great taste and price that is appealing to both the breakfast table and the pocket book! And none of their cereals have high-fructose corn syrup in any of their cereals.
Now to make this it’s pretty much like many cereal treats that we’ve all grown up on. However where the twist is with the cereal used, the addition of items to the butter & melted marshmallow plus coating them in that cinnamon sugar.
Now one thing I loved about churros at that mall is they offered a variety of dipping sauces for them. Being a girl I always went with chocolate. There’s just something comforting about the flavor combination of chocolate and cinnamon. However adding the chocolate frosting on these are totally optional. I have a huge tray of them here next to me and one time I’ll go for the chocolate frosted one and the next I’ll go with the plain cinnamon sugar kissed one.
There seriously is no wrong way to eat these!
This is one of those recipes that you don’t have to cook and you really can’t screw it up. I would say the hardest thing when it comes to making these (other than waiting for them to cool..fyi…you totally don’t have to wait for them to cool to eat them, they just need to be cooled to cut them) is stirring them together to coat every piece of cereal.
And even with that, it’s not hard at all. Actually truth be told I found it easier to mix than the traditional recipe using the other type of cereal. Now it’s not necessarily hard, but if you’re like me with having had 2 shoulder surgeries and one that I’ve been putting off for months now it can be tough on the shoulder.
Once the cereal mixture sets you’re ready to cut these. There’s no bad way to cut these; honestly go with what works for you. I like mine like sticks but feel free to cut them into squares or if you’re super hungry and don’t want to share you don’t have to cut them at all.
Don’t worry, I won’t judge you if you want this all for yourself. I *may* or *may not* have done the same thing myself. *wink*
Now for me I added the chocolate buttercream on mine, “his” I left with that cinnamon sugar kiss coating. He thinks chocolate and cinnamon are weird. But then he also thinks the only good pizza is a plain pizza. Yeah I know what you’re thinking but hey, he’s super sexy, lifts heavy things and okay I’m kinda madly in love with him. Soooooooooo I’ll keep him a little while longer *wink*. lol
Now I have to be completely transparent with you guys on something with this recipe. As hard as you try, you will not be able to resist these. With me I normally don’t eat sweets or when I do it’ll be a bite or two and that’s it, I’m done. And given what I do with a living for my company I always, ALWAYS have sweets and baked goods on the counter. It can look absolutely phenomenal and taste amazing but I’ll just walk past it.
But um… with these yeah, I can’t walk past them without grabbing one out of the container. No for real! When I made these I literally ate 5 bars! It got the point where I had to avoid my kitchen! These things are INSANE!
These bars are CEREAL-iously Delicious! HA! Yeah, see what I did there with that play on cereal? LOL I know I’m a dork but you love me. And I’m telling you guys you are going to LOVE these bars! They seriously transform a marshmallow cereal bar into something truly spectacular!

PrintCinnamon Pebbles Churro Bars

Ingredients
- 6 tablespoon butter, unsalted
- 1 10.5 ounce bag of mini marshmallows (about 6 cups)
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/8 cup brown sugar
- 6 cups Cinnamon PEBBLES cereal
- 1/2 cup cinnamon sugar mixture (1/2 cup sugar plus 2 tablespoon cinnamon)
- 1 cup chocolate frosting *optional
Instructions
- Line a 13×9” pan with parchment paper leaving a 1” overhang and lightly spray. Set aside.
- In a large bowl add the cereal; set aside.
- In a medium non-stick saucepan, add the butter over medium-low heat. When the butter melts add in the marshmallows and stir until completely melted.
- Remove from the heat, add in salt, cinnamon and brown sugar, and stir just to combine.
- Pour the mixture over the cereal and with a sprayed spatula stir to mix.
- Spread the mixture evenly into the prepared pan. Set aside and allow to cool for one hour.
- Grabbing the parchment paper, lift the bars out of the pan and place on a cutting board. Cut the bars into 3 columns lengthways in 1” pieces.
- Roll each individual bar in the cinnamon sugar mixture. At this point, spread some chocolate frosting on top and serve.
- Store any leftovers in an airtight container.
