Sweet Honey Butter Buttermilk Cornbread

Now before I go any further, this “apparently” is a northern version of cornbread. I’m told that “no self-respecting Southerner sweetens their cornbread“. Okay.. more for me!  I’ve made it without the sweetness and it just tastes bland to me. But hey, you do!

Cornbread is Always Welcome

Cornbread is a staple in my house in the winter. It’s the perfect accompaniment to hearty chili, pulled pork, and fried chicken. It makes for amazing stuffing and the best croutons!

When my grandma (and Mom) made cornbread they sweetened it so that’s what I did. I’ve taken their recipes and changed them slightly as even theirs was coarse, not soft and tender. It was delicious but kind of mealy from the cornmeal. That’s a texture I don’t care for. It kind of reminds me of sand.

I want cornbread that is soft, tender, and has that buttery goodness that just melts in your mouth. And that’s exactly what you get with this recipe.

This recipe uses basic pantry and fridge ingredients but what makes this super tender and delicious is the way it’s made.

  • Dairy – butter, buttermilk, and eggs
  • Pantry items – sugar, flour, cornmeal, leavening agents, salt
  • Honey

Prep The Cornbread Batter

What makes this different is that you need to wet the cornmeal and then let it soak in. This is what softens it so you don’t get that sandy texture but you get all of that amazing cornbread flavor.

  1. While the oven is preheating, combine the buttermilk with the cornmeal, mix, and set it aside.
  2. In another bowl whisk together the dry butter and sugar then add in the eggs and some of the honey to create a batter.
  3. As in most recipes, whisk together the remaining dry ingredients in another bowl. Combine the wet and dry mixture, pour into a prepared pan and bake.

When it was done I did like my Mom and Grandma did – drizzled both butter and honey on top and let it soak in.

Once it was cool enough I sliced up a few pieces and plated two bowls of chili. As we ate I was rather silent as I honestly had no clue how or if the cornbread would turn out. Mr. Fantabulous put a little more butter on his and took a big bite. I swear I held my breath.

He was watching TV and often doesn’t pay attention to how stuff tastes. It takes a lot for him to stop and really think about what he’s eating. He did that with this cornbread.

His eyes went from the TV to look at his cornbread and then at me. He swallowed and said, “Honey… is this the boxed stuff???”  I kind of did that doe-eyed Bambi look and said: “Why honey?” He said “Man I don’t ever remember Mom’s being this good. What did you add? It’s incredible!”

My Family’s Recipe – Perfected

I just smiled and then took my bite of the cornbread. OMG, I DID IT! I replicated my family’s recipe but in a better way. It wasn’t grainy or mealy but rather so soft and tender. And that honey butter… OMG! I said “No honey, it’s my family’s recipe. I finally nailed it.

You know me, I don’t do boxed stuff.” And as soon as I said that I grabbed my notepad (I always have a notepad in the kitchen when I cook) and started to write down everything that went into that recipe and in what order. Then I realized the secret to making this so tender and not mealy…

If you soak the cornmeal in the buttermilk first, it makes it so tender and removes the ‘grit’!

Ingredients

  • 9 tablespoons butter, unsalted and melted
  • 1 cup buttermilk
  • 3/4 cup white sugar
  • 2 xl eggs. room temperature
  • 1 cup AP flour
  • 1 cup corn meal, fine crumb
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons honey, divided

Instructions

  1. Preheat the oven to 350F, and rack in the middle. Spray a 9×9 glass baking pan, and set aside. In a bowl, add the buttermilk and cornmeal. Stir to combine and set aside for 5 minutes.
  2. In a large bowl whisk together 8 tablespoons of melted butter and sugar. Add in the eggs and 3 tablespoons honey and whisk until combined.
  3. Whisk together the flour, baking soda, baking powder, and salt in another bowl. Pour the milk/cornmeal mixture into the egg mixture and stir with a large spoon. Once combined, add in the dry mixture and stir just until combined. You don’t want to over-mix it to form gluten. Pour the mixture into the prepared pan and bake for 28-35 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and place on a cooling rack. While the pan is still hot, pour the remaining 1 tablespoon of melted butter evenly over top. Next, drizzle on the remaining 3 tablespoons of honey and allow to cool for 10 minutes before cutting.
  4. Store in an airtight container.

Notes

It is totally acceptable to drizzle more honey and or butter on top once it’s done baking. Go with what you like!

    I have NO idea that cornbread could be not grainy. I had to try it, since I’ve had some corn meal sitting around for possibly too long. Boy was it delicious. Wish I knew about this sooner.

    Way too sweet for my taste but it is delicious. I would cut the sugar in half and add two tablespoons honey instead. I didn’t add the honey on top of the cornbread. Just the butter.

      Thank you Chris! One thing I’ve learned in being a chef when it comes to cornbread, tastes really vary.

      I serve mine with a super hot/spicy chili so the sweetness balances it out. But if folks prefer a more subdued flavor then your suggestions are on point. Thank you!

    This cornbread was unbelievable. I mean….ridiculously good. The first bite that my boyfriend and I took made us both stop and relish as the bread nearly melted in our mouths. I drizzled it with butter that I blended a jalapeno in. It was……nothing short of divine!

    Made this last night to go with some homemade soup. Delicious. Great flavor and texture. I discovered at the last minute that I was out of regular honey, so I had to break into some French chestnut honey, which added an interesting twist.

    Nice recipe! If you mix it just barely so that there aren’t white streaks in the batter, you end up with a lovely crumb. I browned the butter and used medium coarse cornmeal because it was all i could find. It turned out sweet and with a lovely texture and rise from the baking powder/soda. Definitely a solid recipe for the sweet cornbread lovers…..this might even make a solid pancake.

    Once this was done I took a toothpick and poked holes throughout before adding the melted butter and honey. I heated the honey up just a bit to thin it out. It was wonderful.

    Looks nice, I rarely make cornbread, tried once to be honest and loved it. Its a bit expensive getting cornmeal so usually buy it when I go abroad

      Hi Nammi! Oh really? I had no idea it would be expensive. HOWEVER I did find a recipe online that you can make your own cornmeal at home (with a powerful mixer) Just put unpopped popcorn into a food process and process until you get a fine grain (not powder).

    I must say, I’m somewhat amazed that cornbread was on your chili buffet in Pittsburgh! (or did you grow up somewhere else?) I’m a transplanted Ohio Buckeye that has lived many places, but have landed in Lexington, KY for the last couple+ decades. And yes, I DO love cornbread, but NEVER had it growing up. My family memories are similar to yours, and what I want and hope to create for my family are, too.

    My fondest recollections are Sunday “dinners”. ALWAYS prepared and served by my mother at 1pm. Open invitation, just show up and prepare to indulge. My 5 siblings are much older and had large families themselves… by the time I was 12 they had made me and “aunt” 11 times over. A typical menu would be fried pork chops or fried chicken, mounds of homemade mashed potatoes, homemade gravy, FRIED green beans, and store-bought-bake-in-the-oven dinner rolls. The highlight was a homemade dessert, usually a triple-layer Devils Food cake with egg-white/brown sugar icing, or in the summer – homemade ice cream or strawberry shortcakes. Conversation followed, and sometimes board games or “Tripoli”. I can remember the dining room like it was yesterday. And lucky me, I inherited the table, hutch and chairs.

    Thank you for stirring up those memories! Adding your cornbread to the menu in the near future- maybe with chili. And will have daughter, her husband, and 2 grandsons over to enjoy. I think I may tell them to be here at 1pm 😉

      Hi Kay!

      Yep, born and bred in Pittsburgh. And yes, when Mom set up a chili type buffet she’d put cornbread on it. It was cheap and easy to make. We didn’t have much money so Mom made do with what she had. WOW our stories sound so similar! I, too, am the youngest of 6 and there is a large age gap between myself and them. The oldest is 17 years older than me and the youngest of the 5 siblings is 9 years old. I think I was 14 when I first became an aunt.
