The Perfect Weeknight Casserole
If you’re like me, you’ always, ALWAYS on the look out for a delicious and easy casserole. And hey if it’s cheesy… BONUS! This casserole was something I had been thinking about for quite some time. The only thing I wasn’t sure on was how I wanted the sauce.
So when Hoosier Hill Farm came out with their new Cheese Sauce Mix line I immediately knew it had to be one of those. But which one? Truth be told, it was a toss up between the Beer Cheese and the Alfredo Sauce.
However since I had a different vision for the beer cheese, the Alfredo won out!

Grab Your Ingredients
This all starts with basic pantry and fridge ingredients. The only thing that you need to buy is the Hoosier Hill Alfredo Cheese Sauce Mix. Trust me when I say you will regret not buying 2 of them as it’s THAT GOOD!.
- Hoosier Hill Alfredo Cheese Sauce Mix
- Dairy – heavy cream and freshly shredded/crumbled Parmesan Cheese (not the powdered stuff)
- Veggies – Yukon Potatoes and Broccoli
- Meat – Chicken and cooked bacon
- Black Pepper
Make The Alfredo Cheese Sauce
This stuff is pure money! I purposely made a second batch of just the sauce itself so we could use it over nachos and to dunk our soft pretzels it. Y’all it’s INSANE!
- Preheat the oven to 400F. In a large pot, add the cream and bring to a low boil (where it’s bubbling around the edges) over medium heat, stirring occasionally.
- Once the cream is at this stage, whisk in the Hoosier Hill Alfredo Cheese Sauce Mix and black pepper until completely combined.
- Cook for about 5-6 minutes or until it starts to thicken (It will thicken more upon cooling).
- Remove from the heat and slowly whisk in 1 cup of the Parmesan cheese until fully incorporated. You should have a luscious cheese sauce now. Set aside.

Everyone To The Bowl
So in this recipe I went with a thinner skinned potato. You could also use a red potato as well. If you use a russet, I do suggest you peeling them first.
- To a large bowl add the veggies, chicken, bacon and the rest of the cheese. Pour over the cheese sauce and mix thoroughly.
- Pour the mixture into either a 9×13” baking dish / pan or an 11×14” baking pan / dish (also known as a Focaccia Bread Pan). If desired, nestle in a few more broccoli florets.
- Cover with foil and bake until the potatoes can be pierced easily.
- Uncover and broil for a few minutes to crisp up some of the potato edges
This Is So Luscious and Creamy!
As I pulled this out of the oven you could see the edges of the cheese sauce bubbling. I so wanted to just dive in right away but I’ve learned my lesson to wait a few minutes before attempting to eat hot cheese anything from the oven.
So definitely wait a few minutes before diving in!
Recipe Additions/Substitutions
You know how much I love this part!
Substitutions
- Heavy Cream – I would not go with 2% or low fat milk. I would either use whole or half and half. You want that richness from the cream or higher fat dairy products
- Potatoes – You can use sweet potatoes in place of regular potatoes or omit them and go with a heartier squash like butternut
- Veggies – the broccoli you can swap out for green beans, cauliflower, onions, carrots, squash, etc
- Bacon – you can omit it if you want to make this vegetarian
Additions
- Starches – add both types of potatoes or various harder squash cubes
- Meat – cooked pork would be awesome in this
- Seafood – You can add raw shrimp to this but do it the last few minutes of baking as shrimp will not take long to cook. The same would go for crab as well.
Reheating Instructions
I’ve not had anything left to freeze of this each time I’ve made it so I can’t give advice on freezing it. But to reheat it is super easy.
- Microwave – loosely cover it with plastic wrap and microwave in 30 second increments
- Oven – set the oven to 350, cover with foil and reheat for about 15-20 minutes or until warmed through.

Ingredients
Cheese Sauce
- 2/3 cup Hoosier Hill Alfredo Cheese Sauce Mix
- 2 cups heavy cream
- 1 1/2 cups freshly shredded Parmesan cheese, divided
- 1 teaspoon black pepper
Casserole
- 3 lbs cubed Yukon potatoes
- 1 1/2 cups cooked chicken, cubed or shredded
- 2 cups broccoli florets
- 1/2 cup chopped crispy bacon, ~8 slices
Instructions

Assemble
- To a large bowl add the potatoes, chicken, broccoli, bacon and remaining 1/2 cup of Parmesan cheese. Pour over the cheese sauce and mix to combine. Pour the mixture into either a 9×13” baking dish / pan or an 11×14” baking pan / dish (also known as a Focaccia Bread Pan). If desired, nestle in a few more broccoli florets.
- Cover with foil and bake for 45 minutes. Uncover and check the potatoes for doneness (they should pierce easily). If they are not done, bake for up to 15 minutes more. When they are easily pierced, uncover and broil for a few minutes to crisp up the edges
- Serve and store any leftovers in the fridge.
