How to Make a Mornay (Cheese) Sauce
This sauce right here is the key to the whole dish! It takes about 10 minutes to make and is pretty easy to make!
- In a medium saucepan over medium heat, add some of the butter. Once the butter melts and is foamy, add the flour, whisking it in thoroughly, and cook for 2 minutes. Slowly pour the warm milk in while whisking constantly to prevent lumps.
- Add in the mustard powder, kosher salt, black pepper, and garlic powder, whisking to combine. Continue to cook over medium heat until the mixture thickens. ~2-4 minutes. Remove from the heat and add half the cheese in, whisking to melt in. Once the cheese is melted, add the rest of the cheese, stirring to combine.
Assemble the Casserole
- Add the cooked noodles to a large bowl. Add in the chicken, ham, and parsley. Mix to combine. Pour in the Swiss Cheese sauce and mix to coat evenly. Transfer the mixture to the prepared 8×8″ baking dish.
- Melt the remaining butter and add it to the breadcrumbs. Mix to combine. Sprinkle the buttered breadcrumbs all over the top of the casserole.
- Bake the casserole for about 30-35 minutes or until the breadcrumbs are toasty and golden brown.
- Remove the casserole from the oven and allow it to rest for about 5 minutes before serving. Store the cooled leftovers, covered, in the fridge for ~3-4 days.
This Chicken Cordon Bleu Casserole is THE BEST!
I was taught at a young age never to let food go to waste. And that you can transform leftovers into something new, delicious, and exciting. That’s this recipe!
- Classic Flavors Without The Fuss: No need to roll, bread, and fry. You get the same savory, cheesy, creamy flavor without all that extra work!
- Leftover Makeover Success: Leftover chicken, ham, or cooked pasta can easily be transformed into a crave-worthy meal that feels like anything but “leftover”.
- Creamy, Cheesy, & Comforting: Each forkful is loaded with tender noodles, smoky ham, tender chicken, and that luscious Swiss cheese sauce. It’s the epitome of comfort food!
- Quick & Easy Weeknight Dish: In about 15-20 minutes, you can have this casserole put together and popped in the oven when you need dinner to be delicious and stress-free.
- Perfect for Meal Prep & Freezer Meals: Make a double batch so you can have one for dinner and the other one to pop into the freezer (unbaked) for a future meal.
Chicken Cordon Bleu Casserole FAQs
- Can I assemble this ahead of time? Yes, but I would not add the breadcrumbs until right before baking. Assemble the dish, cover tightly with plastic wrap, and store in the fridge for up to a day.
- Can I freeze this? Yes, but I would advise freezing it BEFORE baking it.
How to Cook A Frozen Casserole
- Thaw Before Baking: Take it out at least 24 hours before baking. When you’re ready to bake it, take it out of the fridge at least 30 minutes before baking (if your baking dish can’t go from fridge straight to the oven). Top with the breadcrumb mixture and bake for at least 30 minutes or until the middle/internal temperature of the casserole is 165°F.
How to Reheat a Casserole
- Oven: Preheat the oven to 350°F. Drizzle 1-2 Tablespoons of milk into the casserole (this helps it stay moist). Cover tightly with foil and reheat until the casserole is heated through (~20 minutes).
- Microwave: Add a few tablespoons of milk into the dish, cover loosely with plastic wrap, leaving a small opening for the steam to escape. Microwave in 30-second intervals until hot all the way through.
Chicken Cordon Bleu Casserole Modifications
- Gluten Free: Use gluten-free flour for the Mornay sauce. For the breadcrumbs, use gluten-free breadcrumbs or any gluten-free crumbled cracker. For the egg noodles, go with gluten-free egg noodles.
- Cheese: If you’re not a fan of Swiss cheese, you can use Fontina, Jarlsberg, Emmental, Gruyère, or Monterey Jack
- Breadcrumbs: You can use panko, crushed pork rinds, crushed potato chips, or Ritz crackers.
- Meat: Swap the ham for prosciutto or Speck. Cooked bacon is also delicious!
