Chef Lori’s Tips for Bacon-Wrapping Food

  1. When you wrap any food with raw bacon, DO NOT pull it tight. Just wrap it so it covers the food, but do not “tug on it.”
  2. Bacon shrinks as it cooks. If you pull it tight, it’ll come undone.
  3. Just wrap it around and overlap the pieces. You want to ensure the final “end” piece is on the bottom, as it will stay secure and wrapped as it bakes up.

How to Make Stuffed Figs

I think this whole tray took me about 10 minutes to assemble.

    • Can I make these ahead of time? Yes! Just assemble up to a day in advance and store them covered in the fridge. Just make them when you’re ready to serve.
    • What type of bacon should I use? Go with regular-cut versus thick. Thick-cut will take way too long to cook, and you’ll end up with mushy figs.
    • How do I keep the bacon from unraveling? You can use a soaked wooden toothpick, but as long as you don’t overly stuff the fig, you shouldn’t need that. As long as the bacon overlaps slightly when you place it on the cooling rack, it shouldn’t unravel.
    • Can I serve these at room temperature? Of course! They are best served warm, but still super scrumptious at room temperature.
    • How many should I plan per person? If it’s on a table with a bunch of other bites, about 3 per person.
    • Do I need a dipping sauce for these? Since these are finished with hot honey, there’s no need for a sauce. If you want to skip the hot honey, try a balsamic glaze instead.

    How to Reheat Bacon-Wrapped Figs

    I’m gonna be honest, I don’t think leftovers actually exist, but if you are lucky enough to catch a unicorn, then here’s how:

    • Oven: Preheat the oven to 350°F. Place the leftovers on a rimmed baking tray and cover loosely with foil (this prevents the bacon from burning. Reheat for about 10 minutes or until warmed through.

    Stuffed Fig Substitutions

    • Cheese: Go with cream cheese, blue cheese, or mascarpone. I would avoid soft, melty cheeses like brie.
    • Bacon: Prosciutto would work. Sorry, but I don’t do turkey bacon, but you do you if you want to try it.

    Grill Instructions:

    This requires you to set up your grill for Indirect cooking/ If you’re unsure how to do this, check out this post.

    1. Set up the grill for indirect cooking. Preheat the grill to 400°F. Assemble the bacon-wrapped dates and place them on a cooling rack, bacon-seam side down.
    2. Place the cooling rack on the indirect side. Grill for ~20 minutes or until the bacon is cooked through.
    3. Transfer to a paper towel-lined plate and serve immediately.

    Air Fryer:

        Thank you so much Rick! These are one of my favorite appetizers to make. My husband was the same way when it came to figs; he only ever had them in in newtons as well. The first time I made him these he ate almost the whole tray! Now I know to make a double batch!

      I bought a huge package of figs at Costco and was looking for ways to use them up. I came across this recipe and I am so happy I did! The hot honey finish made the dish! Sweet, salty, spicy, and creamy! I’m going back to buy more figs as these were exceptional!
