If you’ve ever been to a cookout, gathering with friends, or game-day party, these little sausages are always on the table. I’m taking the nostalgic charm of wrapped sausages and giving it a mouthwatering upgrade. We’re talking Lil Smokies sausages, tangy BBQ sauce, creamy smoked Gouda, all baked in a golden corn dog cup!

How to Make Corn Dog Lil Smokies
While I love a classic slow cooker full of Lil Smokies wrapped in bacon in BBQ sauce, these are less messy and dare I say, tastier!
- Preheat the oven and lightly brush the inside of your mini muffin tins with olive oil; set aside.
- Place the corn dog wraps on a piece of parchment paper. Place another piece on top and, using a pastry roller, roll the wraps into a relatively uniform rectangle, sealing the seams as you go. You’re looking for ~12″x14″ in size.
- Using a sharp knife or pizza cutter, cut the dough into 12 squares.
- Carefully press each square into the prepared mini muffin well, pressing it down into it and up the sides.
- Add in one of the Lil Smokies and 2-3 pieces of the Smoke Gouda cheese.
- Spoon in some of your favorite BBQ sauce and bake for ~18-22 minutes or until the muffins are golden brown and the dough is cooked through.
- Once done, immediately remove them from the pan. Using a thin, offset spatula, remove the corn dog muffins from the pan and place them on a cooling rack for a minute or two to allow them to rest. *If you place them directly on a plate, the bottoms can get soggy.
How to Serve Lil Smokies Corn Dogs
I prefer to drizzle a little more warm BBQ sauce over them and top with some chopped green onions before we all dive in.
I will warn you, though… these are pretty addictive and most folks devour them, so you may want to make extra!

- Do I need a dipping sauce? Since they already have BBQ sauce in them, you really don’t need another sauce, but feel free to serve some extra sauce, warmed, on the side for those who are dunkers and love it saucy!
- How do I keep them from sticking to the pan? I lightly brush each mini muffin tin with olive oil before adding the corn dog wrapper.

- Oven: Preheat the oven to 350°F and place them on a parchment paper-lined baking pan. Heat for ~5-7 minutes or until warmed through.

- Corn Dog Wrappers: If you can’t find it (I get mine at Walmart), you can use puff pastry or crescent dough.
- Lil Smokies: fully cooked smoked kielbasa and cut-up hot dogs also work
- Cheese: You honestly can go crazy here. Try to go with a firm/semi-firm cheese, though, to prevent it from oozing out too much and becoming gooey.
- BBQ Sauce: Try my homemade chili sauce, cranberry chili sauce, honey mustard, or any of my BBQ sauces.

- 6 Gouda String Cheese Sticks, cut into eight pieces per stick
