Living in Manhattan for a few years, I’ve had my fair share of “mystery meat” chili sauces from the carts that just turned a perfectly good bun into a soggy mess. Frankly, I wanted something better for me and for us – a sauce that’s hearty, perfectly balanced, and made with simple ingredients you most likely have on hand.
This sauce is thick enough to pile high, yet you can easily tweak it to make it super fine. There are no beans in it, but rather just pure delicious, chili flavor that hits all the right notes with some Worcestershire to give it that deep, simmered-all-day umami kick and a hint of brown sugar to round it all out.

Hot Dog Chili Sauce Dog Ingredients
This recipe took me years to perfect, to be honest. It was always good, but it just seemed to be missing something. It wasn’t until I added just a trace of brown sugar that it came together perfectly and balanced out.
- Ground Beef: I prefer 80/20 for this, as I wanted more tender beef
- Sauces: ketchup, yellow mustard, and Worcestershire sauce
- Tomato Paste
- Seasonings
- Brown Sugar
- Water (though if you want to amp up the beef flavor, you can use some water and the rest beef broth)
How to Make Chili Hot Dog Sauce
This comes together in under 30 minutes and is one of those recipes I highly recommend making a double batch of, as you’ll go through the first batch quickly!
- In a saucepan, add the ground beef and 1/4 cup of water. Cook over medium heat, breaking up (as fine as you’d prefer) until the meat is evenly browned. Drain and discard the liquid. Put the meat back into the pan.
- Place the pan back on the stove, add the remaining ingredients, stirring to combine, and bring to a simmer. Cook until most of the liquid is reduced, ~10-12 minutes. This makes a thick chili sauce, so if you’d like it looser, add a tablespoon or more water/stock.
- Remove from the heat and enjoy. Once cooled, transfer to an airtight container and store in the fridge for up to a week.

- HEAT: If you want a little bit of kick, throw in some red pepper flakes, a dash of hot sauce, or mince up some jalapenos.
- SUGAR: You could use honey, maple syrup, or molasses
- MORE BEEF FLAVOR: You could swap the remaining 3/4 cup of water for beef stock.
