I’ve made tens of thousands of salads in my career and this has to be the best salad ever. It’s a true flavor explosion of grilled chicken, charred corn, bacon, chopped veggies, and a cilantro lime vinaigrette that is pure magic!

This Chicken Cobb Salad Is The Perfect Anytime Meal

I get it, “it’s just a salad, Lori; how amazing can it be?” Oh, my dear, TKW family member, this salad is next level. The star of the show? A cilantro lime vinaigrette that ties everything together. This salad is perfect for lunch or dinner.

Just one bite and you get a full-on bomb of flavors and textures. Crispy, salty bacon, tender grilled chicken, and that slightly charred sweet corn paired with that egg are incredible. But we’re not finished – we still have those crunchy bits of cucumber and flecks of funky feta and creamy avocado, and yes, you can even add tomatoes if you wish.

Chicken Cobb Salad Ingredients

So I call this the “almost Cobb“, as honestly the only missing ingredient is tomatoes. You can add them but I’m weird about raw tomatoes.

  • Protein – Grilled Chicken Breasts, Eggs, Bacon
  • Veggies -Spring Mix, Cucumber, Corn, and Avocado
  • Cheese – Feta for the win
  • Vinaigrette – seriously, this Cilantro Lime Vinaigrette makes the salad

How to Make The Ultimate Cobb Salad

  1. In a nonstick skillet, add your reserved bacon grease and add the corn kernels. You want to char them slightly.

  1. To each salad bowl, build your foundation. Add in the spring mix, followed by some of the cucumbers right down the middle (we’re going for a presentation here).
  2. On each side of the cucumber, the egg slices.

  1. Next to the egg, add the corn, and the chicken goes over the center.
  2. On the outside, add the bacon and avocado cubes.
  3. Sprinkle over the feta.

For The Cilantro Lime Vinaigrette

  1. In a bowl, add the ingredients except the oil, whisking to combine. Drizzle the vinaigrette over the salad.

What to Serve With Chicken Cobb Salad

Now, this is a meal unto itself, but if you’re like me, you want something on the side with it.

  • Crusty Bread – this No-Knead Focaccia is perfect with this salad
  • Soup – If you want, serve this as a smaller salad with a cup of Italian Wedding Soup, Chicken Tortilla Soup, or Chicken & Gnocchi Soup
  • Smoked or Baked Potato
  • Chips – these smoked garlic onion parmesan chips would be amazing with the salad

Ingredients

Salad

  • 2 grilled chicken breasts, cut into chunks
  • 8 cups Spring Mix greens
  • 1 1/2 cups cubed cucumber
  • 4 Hard Boiled Baked Eggs, sliced
  • 4 slices thick-cut bacon cooked crispy and chopped, and one tablespoon bacon grease reserved
  • 1 whole avocado, pitted and cubed
  • 2 cups fresh corn off of the cob
  • 1 cup crumbled feta
  • Halved Cherry Tomatoes *Optional

Cilantro Lime Vinaigrette

  • 2 tablespoons fresh lime juice
  • 4 tablespoons chopped cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons white wine vinegar
  • 1/4 cup honey
  • 1/2 cup avocado oil (or extra virgin olive oil)

Instructions

Make the Vinaigrette

  1. In a bowl add the lime juice, cilantro, salt, pepper, vinegar, and honey, and whisk to combine.
  2. While whisking slowly add in the oil to combine; set aside.

Make the Salad

  1. In a nonstick skillet over medium heat, add your bacon grease and heat until melted. Toss in your corn kernels and sauté for 3 minutes, stirring to prevent charring. Remove from the heat.
  2. In 4 large salad bowls, add 2 cups of the spring mix each.
  3. Next, down the middle of each bowl, add 1/4 of the cucumber to each bowl.
  4. On each side of the cucumber, add the egg slices, evenly dividing between the bowls.
  5. On the outside of that, add the corn. Turn each bowl 90 degrees and add the chicken down the center, followed by the bacon on each side and then the avocado cubes on each side of the bacon.  If using, add the tomatoes in the middle. Lastly, sprinkle over the crumbled feta. Whisk the vinaigrette again and ladle on.

    Made this, it was amazing, love the dressing, no honey so substituted maple syrup, best salad my girlfriend has ever had. And I’ve got the leftovers for lunch tomorrow!

    This salad was a rave hit!
    Please tell how many people your recipe serves. I assume it was 2 or 4 people? Also please specify bowl vs plate. Do you toss in the bowls? Or plate the salad and build on the plate? Its not vey clear. Thank you

      I updated the servings. In the directions I list specifically how to plate/assemble this. I talk about using 2 huge bowls and how to assemble the salad on top. I think perhaps you may have missed those steps in the recipe?

    Made this last night with a few tweaks…see, I am one of those people who love goat cheese, had it on hand, and didn’t have any feta in the fridge. My husband loved it, too. This dressing is amazing! Love it, love it, love it. Your gumband comment made me smile. I remember when I moved from Pittsburgh to Cleveland way back when and asked someone in the office for a gumband. They looked at me like I was from another planet. And, this was Cleveland, only 3 hours from Pittsburgh! I never made that mistake again.

      Thank you so much Diane! I’ll eat some thugs with goat cheese on it but it has to be sparse. Like I have a killer pizza recipe on here that features goat cheese and it’s super yummy!

      Pop, gumband and buggies… say those 3 words outside of Pittsburgh and folks look at you like you’re speaking a foreign language.

    I googled “best salad” searching for a hit for an upcoming potluck and stumbled upon this recipe. This sounds amazingly delicious and I think I’ll bake some tortilla bowls to eat it in! By the way, your commentary was really enjoyable and as I thought to myself how awesome and funny you were, I discovered you were from Pittsburgh amd it all made sense! (I am too if you haven’t ha) Anyway, I’m super excited to try loads of your recipes now…after looking at all the food porn on your IG I just about passed out! Thank you for sharing with the world!
