Happy Monday, TKW Family! I hope you had a fantastic week last week! Last week was pretty good. The best part is we FINALLY got some much-needed rain. Have to admit, it still shocks me that I now get happy and wish for rain considering that I come from Pittsburgh where we would get more rainy days than sunny.
But with the rain and damp weather here came the RA flare-ups. So working and typing has been hard but I push through. Work doesn’t stop and I certainly don’t take a break. I just do things differently and ask for more help than usual. I guess it was a blessing if you will as it gave me a chance to slow down and make some sweet treats in the way of ice cream. I have a countertop compressor ice cream maker that I LOVE as there’s no pre-freezing bowls (seriously hate that!) and we have amazing ice cream in under 60 minutes. This past week I made strawberry cheesecase, vanilla bean, and fudge ripple with brownie chunks.
