Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Pressure Cooker Mom’s Classic Pot Roast with Savory Onion Gravy and the Cowboy BBQ Beef, Bean & Bacon Chili!

Happy Sunday TKW Family! How was your past week? How many of you sent your kids back to school/college last week? So many of my friends were sending their first-born off to college, posting pictures of their new dorm or apartments. Man, times sure changed when I was first went off to college! My first dorm room was on the 3rd floor of a very old building that didn’t have an elevator or air conditioning. The rooms were uber small and no one had a private room. The bathrooms were shared by the entire floor. No amenities were provided. What’s that mean? If you wanted a phone to work “long distance” in your room you had to pay for it. Cable wasn’t an option and if you wanted a fridge you had to rent one.

It sucked. Period. Now I’m seeing posts of freshman kids starting off in apartments where they have their own bedrooms and bathrooms. Full kitchens and cable/internet/phone are included. Can I go back to school please?

Ah to be that young with my whole life ahead of me! I wonder how my life would turn out differently, if at all. Sure there are things I’d change, perhaps a different path, definitely invest in Apple/Google and travel way more but for the most part I’d keep a lot the same. How about you? If you could start anew – what one thing would you change?

So last week was our first official week of ‘normalcy’. Have to admit, it was kind of hard to deal with. Oh don’t get me wrong, it was a good thing but it was just ‘weird’. Like we had actual time to do stuff we enjoy. I actually got to be in the kitchen for fun and not because we wanted something to eat or because I had a client shoot. Mr. Fantabulous was finally able to go back to band practice which meant I had a few hours to my self in this gorgeous house. How did I spend it? um… laundry. LOL But I did get to watch a chick flick too!

I’ve been traveling a lot lately and have been eyeing up these Bose Quiet Comfort II Wireless headphones for the longest time. I am a HUGE Bose fan – they simply are the best. But I wouldn’t pull the trigger to buy these as they aren’t cheap. Last week I got a notification that they dropped $50! While they are still pricey they are absolutely worth it! Yesterday was my first real test with them – do they really cancel out the noises and allow me to hear my music without external distractions? The answer is YES!!!  I had to cut the grass and our big John Deere tractor is LOUD. My old headphones worked but I could hear the tractor which meant I had to turn the music up even louder. Yeah – not good on protecting my ears, huh? Yesterday I put these on around medium volume, cranked up the tractor and sat on it for 2 hours and the only time I heard a low rumble was when the song switched to the next one. But even at a medium volume the tractor was completely hushed out and all I had was AC/DC rocking in my ears!

As I said, last week I finally had ‘me’ time in the kitchen which meant my camera was working overtime. Mr. Fantabulous was in heaven as he was getting treats out the wazoo! I had a few peaches to use up so I whipped up a quick peach crisp. For tartness I added in a few blueberries and copious amounts of streusel. He loved it so much that I had to make it again the next day!

Then there were these Sweet Potato Chipotle Enchiladas (recipe coming soon for the filling!). One of my favorite things is to make up a huge batch of ‘filling’ for my weekly meal prep and use it in various ways.

And then there was this cookie yesterday. So I’ve been toying around the idea of making a recipe that just made one (or 2) ginormous cookies for when you really don’t want to make a full batch or you don’t have any frozen cookie dough balls in the freezer. Since I’m all about quality control I made the recipe a few times. What you see below are Chocolate Chocolate Chip Me Cookies. Each batch makes 2 huge cookies for those nights when you simply NEED something decadent and you don’t want to share.

When you are desperately NEEDING a big fat chocolate chocolate chip cookie but you don’t want to make a full recipe and you have no frozen cookie dough. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Working on a new Cookies for One recipe! The recipe makes 2 GINORMOUS cookies! One for you annnnnd another one for you! Hey not everything needs to be shared! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Letting the @callebautchocolate cool on top before biting into one.
