Weekly Menu

These Weekly Menu recipes allow you to get out of that same ol’ recipe rut and try some delicious and easy dishes! This week I highly recommend making the Sriracha Honey Butter Wings, the Sweet Potato Chipotle Tacos and the Pittsburgh Pierogi Pizza!

Happy Sunday and Happy Mother’s day! Today is a hard day for me though I suspect it’s hard for all that have  already lost their Moms. I was 18 when she passed and, to this day, I miss her dearly. Mom’s are the ones we go to when we need comfort, give that special hug that only she can give and, somehow could make everything better with just a few simple words. When I look in the mirror I see her with the only real difference being that I have my Dad’s eyes. But every other feature – I am my mother’s child to a tee.

These Weekly Menu recipes allow you to get out of that same ol’ recipe rut and try some delicious and easy dishes! This week I highly recommend making the Sriracha Honey Butter Wings, the Sweet Potato Chipotle Tacos and the Pittsburgh Pierogi Pizza!

Mom

While we all wish our departed loved ones were still here with us, I wish she was here (not only for me but) for you guys to meet. She was such a gentle and kind soul, patient and full of so much love. She’s the one that taught me the most when it comes to cooking and kitchen. Way more than formal education. She taught me real-life skills when it came to making something amazing out practically nothing. It was through her teachings that she taught me life lessons.

Patience – something I used to struggle with pretty bad as a child. It was through her showing me how to make bread, to knead, waiting for it to rise and let it ‘bloom’ did she also teach me how to be patient in life.

Kindness – as you all know, we were extremely poor. However if a neighbor, a friend was in need, Mom would find a way to help them out. She’d cook extra and send one of my brothers to their house carrying a full meal (plus bread and dessert). She never once asked for anything in return.

While I would have given anything to be a Mom myself, God had other plans. However I still carry on all of those “mom” lessons in my life. It’s because of her (and my Dad) that I’ve grown into the woman you guys know today.

So today, if your Mom is still with you presently or in spirit, give her a longer hug, a kiss on the cheek and tell her how you appreciate, value, love and respect her. That will mean more to her than any flower, any gift or any meal.

Now that I FINALLY am home from my trips and the jet lag is gone I can not get back to my regularly scheduled program of posting new and delicious recipes for you guys!  I have a bunch coming out that are perfect for spring and summer. What are some of your favorite go-to meals in the warmer months? And yes, ice cream totally counts as a go-to meal!
