It’s Sunday already? Wow… last week flew by. So how was your week?
With the weather in Pittsburgh being more temperamental than a hormonal teenager, we’ve been battling “something”. It’s like you’re not “sick-sick” but rather you just feel crappy.
But then how can anyone be surprised when it’s 17F one day and 72F the next! I mean seriously… what’s going on with the weather?! I swear the whole city has this funk going around. Oy!
Healthy New Year
So how’s your healthy new year going for you? What changes have you made?
For us, I’m adding more veggies into our meals – even desserts. I’ve been on this HUGE Thai kick lately where everything practically has been covered in my Thai Spicy Peanut Sauce. Full disclosure though, Mr. Fantabulous refuses to try it. He’s not that big of an adventurous eater and the thought of “peanut butter” on the chicken is just wrong.
No worries, more for me!
I’m also going to start posting more ways to “skinny-up” recipes in the body of posts.
For example, I’ve been putting sections on how to make a dish keto-friendly or vegetarian/vegan. Take the recipe for my Chunky Portabella Veggie Burger above. Not only do I give you Keto and Gluten-Free Substitutions but I also give you Dairy, Egg-Free, and Vegan Substitutions.
My goal is to create recipes that most, if not all, can enjoy!

We all visit blogs looking for delicious items and inspiration. What I find (and you should as well) the MOST USEFUL thing is the comments that people leave. Honest feedback, good or bad but respectful please, on a recipe.
You can give suggestions on what you’d tweak or a spin you put on it. Heck or just tell me that you loved it! Like how to make vegan, keto or not use mushrooms.
This is how I grow and become better on here and it gives you guys real feedback. The absolute most critical thing you can do for me is to leave a comment on the blog recipe post.
When I look at someone else’s recipe I read the comments as to me, that’s honest feedback. So when you make a recipe of mine or plan on making it, leave a comment on the post. I, and everyone else that goes to my site, truly would appreciate it!
