Oh Sunday how I love you and how I hate you. You signify a day when I’m “supposed” to sleep in and rest (though let’s be real, that never happens because I always have 114 things going on at the same time). But then you signify that I have to go back to work tomorrow. I used to think Sunday’s were the best but I’ll be honest I’m re-thinking that logic. It’s your last day to sleep in and you have to work the next day. I’m thinking Friday nights are the best time of the week. Think about it – for most of us it means you have 2 “free” days where you can do what you want. Right?
Yeah, that doesn’t happen either. LOL Ahhhhhhhhhhhh this whole being an adult is not all it’s cracked up to be. Kids if you can’t wait to grow up and be an adult, trust me, stay a kid as long as you want. This adult thing is kinda hard. It’s stressful and can be taxing at times. Sure we get to do “funner” stuff in your eyes – stay out all night, party with friends, vacation, buy as many animals as we want. But here’s the truth – staying out all night isn’t want it’s cracked up to me. You may not be able to sleep in the next day and most people cannot function on a few hours of sleep. Then if mix in adult beverages you will probably feel yucky. Next vacations – oh sure they are awesome BUT you have to work, work, work to pay for them. And the animals – now truth be told I had about 3 cats, 2 pigs and a dog right now if I could but the issue is – SOMEONE has to take care of them, pay for their food, clean up after them. It’s a lot, A LOT of work.
So yeah, stay a kid as long as you can – color on the floor, play with your dolls, and just enjoy your family and friends.
So last week work-wise was ROUGH but honestly it’ll be like that for the next few months. However I did get some good news – I’m going to be working from home pretty much full time starting next week. My commute right now is about 3-4 hours a day with just “normal” traffic. Since my group is relocating to another building it was going to add on another 40-60 minutes to my commute thus giving me a 4-5 hour daily commute. Thankfully my company cares about their employees and offered me this option. Honestly, not many companies these days would give 2 cents about an employee but the company I work for, they do.

Man it’s Sunday already? Where in the world did my week go? Heck, where did my Saturday go??? Last week was rouuuuuuuuuuugh work-wise. I keep telling my boss I need cloned – I need about 10 of me to do my job. But it’s all good, I love what I do so I can’t complain too much. Saturday I ‘butterflied’ most of the day. Meaning I had specific things I had to get done but I got distracted (i.e., I saw something shiny or a butterfly and it captured my attention) and did none of it. I mean I got stuff done but nothing I had to get done. Instead I cleaned out the shelves in my supply room and managed to fill 5 HUGE garbage bags to donated to the food bank. And then I cleaned, argued with Mr. Fantabulous about how much “stuff” I have yet the man fails to realize he has an entire 3600 sq. ft building on the property full of HIS stuff and another 2-car garage of HIS stuff. Oh wait, the attic of HIS stuff. Yeah I have the kitchen – um, kinda makes sense and 3 shelving units downstairs. But IIIIIIIIIIIII have too much stuff. lol
Anyway today I’m suuuuuuuuper swamped. Since I got nothing done yesterday today I’m powering through in the kitchen. I have beer braised country-style boneless beef ribs in the oven, just pressure cooked 4 Mexican beef stuffed peppers, made some Salsa Beef burgers, some crispy potato cups that I’ll fill with … um.. something that’s yet to be determined. I still have to make dessert. Annnnnnnnnd apparently “we” need to go to Home Depot… again. Grrrrrrrrrr. Actually though I don’t mind as he can help me take all of that food to the food bank – it’s heavy.
Thankfully the weather here is cooperating. It hasn’t really been cold and we haven’t had much snow. I know this week it’s supposed to be in the 60’s which is just unheard of for Pittsburgh. By now we’re having some arctic blast that pretty much brings the city to a halt. The bad thing about this weather is the plants are confused and starting to grow which means when the arctic blast hits (or wait.. what’s the new phrase? Polar Vortex?) they will get hit hard 🙁

Happy Sunday TKW Family! I’m tired today. Last night I didn’t get to bed until really, really late as we just upgraded our new phones and before I could activate mine I had to transfer all of my stuff from my old phone to my new one. It’s funny almost ALL OF MY STORAGE on my phone is not of games or music. Nope… it’s of food pics. I mean we’re talking only a few pics of my husband and 978 bajillion of food. Sad, huh? But after holding my breath, saying about 42 prayers it’s all transferred over and good to go. Now I just need to activate it… and order a new tempered glass screen cover. Trust me when a phone is what, $700, you want to protect it. And these tempered glass phone covers are AMAZING! I’ve dropped my old phones (on accident) from 4′ in the air screen-side down on a cement sidewalk and the phone was fine. The tempered glass cover that I had on it spider-cracked but never shattered and once I removed it (again it stayed complete), the phone screen itself looked perfect!
Anyway, how was your week last week? Mine kept me super busy. Since we’re (more like Mr. Fantabulous) is busting our butts to clean out the downstairs and sell items/donate before we put in the hardwood flooring. I’m getting rid of a TON of pans (new and used), food porn props (plates, bowls, platters), crock pots, chafing dishes (brand new) and so much more. If any of you live in the Pittsburgh area and are interested let me know.
Today I’m pretty busy I need to put in about 8 hours of work today for my day job and yes, travel to Home Depot for God only knows what that man says he needs but doesn’t have here. Right now as I’m typing this I’m making some of my Ultimate Waffles as it’s Sunday, I wasn’t in the mood to make him blueberry pancakes and I want a chicken and waffle sandwich later. OMG it’s soooooo good! It’s 2 waffles with some roasted chicken, crispy bacon, arugula, sliced avocado, gouda (cause that’s my go-to cheese) and a honey dijon drizzle. DELISH! I keep meaning to take pics of if and post the recipe but it’s so damn good I end up being impatient and eating the whole thing. Sorry not sorry…

Hey TKW Family, if you don’t mind I’m going to keep today’s post short. Many of you read the news last week on my Facebook and Instagram pages that my beautiful sister, Dianna, passed away on Sunday. She is the one that my past 6 months of posts I kept referring to the person that was battling for their life. My sister was never one to be the center of attention and kept her private life, private. I’m still having a very difficult time with it. Today will be extremely rough as well as today is the blessing of her ashes.
I will be writing a tribute post soon, but right now I am truly lost, heart broken and devastated.
Thank you all for being patient with me. I truly appreciate it and I love you.

Hey TKW Family, happy Sunday! How was your week? Mine was pretty good though super busy. I only got to post 2 posts last week (sorry) due to my being so busy. It’s funny as I have at least 200 recipes with photos that I need to post but it’s getting the point where I could really, REALLY use an assistant. If you have college kids (or you are one) and are looking to get into social media let me know as I can work with their school to help with an internship.
Besides being super busy at work I’ve been having some issues with my photo shoots. The past 4 shoots the pictures have come out grainy. Now I shoot only in manual mode and while I’m nowhere near a professional photographer I still have to ‘think’ when it comes to ISO, Shutter speed, Aperture and the rest. It’s like I have this learning block that I just can’t get the hang of it. However that’s one good thing about my being an engineer – I’m persistent. I HAVE to master a task – pick it apart and understand the mechanics and foundations. Once I master that then I desperately NEED to start delving into creating those 30 second-a minute food videos. Again, this is where an assistant would be of HUGE value here.
Last week Mr. Fantabulous got the downstairs bathroom tile put down. Tomorrow he’ll grout it and then we can finally start on the hardwood floors. THAT should be a treat (as she rolls her eyes). He swears it’s a lot easier than putting down tile but I don’t know. This damn kitchen floor tile almost caused us to get a divorce. Well not really but OMG did we fight. It got so bad we didn’t speak for 4 days. I mean AT ALL. And I didn’t cook once. I know… it was bad. But he’s my best friend and I can’t stay mad at him for long.
