Chocolate Cream Dream Pie

Creamy? Dreamy? Chocolatey? Fantabulously Delicious? You owe to yourself and everyone you love to make this pie!

This pie and I go back decades. Like we’re talking first broken heart, decades. This pie has seen me at my very worst where I’m a blubbering fool swearing off dating and boys forever to my first real kiss. This pie has seen the good, the bad and most definitely the ugly – hello stir-up pants, shoulder pads, mile-high hair and bright blue eye shadow ugly. Ah the 80’s… good times. TERRIBLE fashion but phenomenal music from pop, old school rap and dude— HAIR METAL!  LOL Sorry, going off topic here. Man I loved the 80’s though.

Anyway… back to this pie. Dare I call it my bestie? Can a food be a bestie? Yes I know “eating to soothe feelings is not right and can lead to blah blah blah”. I get it. But when you’re 14 years old and you have your heart-broken by that guy you had been crushing on all year only to hear he asked someone else to the dance instead of you… yeah, this pie was needed.

I can still remember getting off the bus that day, eyes all puffy and watery trying to fight back the tears on the bus. My oh-so-perfect-makeup <shakes her head no it wasn’t… I looked like a clown looking back on those pictures> pretty much wiped off and mascara smeared on my cheeks. As I walked into the house and Mom asked me if my crush had asked me, I ran to my room in tears. Slamming the door, blaring some sappy song, sprawling on my bed and having what seemed to be the worst day in my life.

To all the heartaches, thank you as you made this pie possible!

Ultimate Cookie Butter Cream Pie

An Oreo® Cookie Butter cookie crust with a layer of chocolate ganache and the most decadent, dreamy, creamy cookie butter cream filling you could ever imagine! It’s truly bliss in every single bite!

Now before we delve into this I know what you’re thinking “can I use peanut butter instead?” and the answer is “Yes!” It’s pretty much an even swap plus a bit more sugar but trust me when I say this, don’t!  Don’t go the ‘instead’ route or crinkle up your nose because you’ve never had let alone heard of cookie butter. I love peanut butter but cookie butter, oh how I LOVE YOU! It’s seriously the next best thing since peanut butter, bacon (well okay.. NOTHING is better than bacon), chocolate, Vin Diesel, sprinkles, teacup piggies and air! It’s basically ground Speculass (Speculoos) cookies mixed with spices and some coconut oil that is seriously AWESOME in a jar!  It has the same creamy texture as peanut butter but no nuts whatsoever.

So step away from the creamy peanut butter and trust me on this one. This pie is the ULTIMATE!

Ultimate Cookie Butter Cream Pie

Okay so let me fill you in on the back story of how this came to be as it wasn’t even a thought in my head to make. I had gone to Walmart for my weekly shopping excursion and half way through the store I got hungry. Like we’re not talking a little hungry but A LOT hungry!  Like to the point I was scrounging through my purse to find something, anything to tide me over. FYI – cough drops do NOT help when you’re starving but my throat never felt better. LOL Anyway, as I was pushing my buggy (yes I’m from Pittsburgh and we call our shopping carts ‘buggies’) when on the end cap of the aisle was this glorious display of Oreo cookies. And there it was, as if the heavens were shining down on that single package. “Oreo Cookie Butter Cookies”. Wait, what??? What is this?
This pie is going to be your go-to let me impress someone pie!

Super Easy Cherry Pie Bars

These cherry pie bars are filled with cherryrific pie filling layered in a no-roll, cookie pie crust. Perfect for parties as you can hold a drink in one hand and a cherry pie bar in the other!

Okay no, hell did not freeze over nor did yours truly hit her head. No I wasn’t abducted by aliens or is someone impersonating me. It’s me, Lori… for real. Yes I posted yet another cherry recipe. I know what you’re all thinking…’but you hate cherries Lori. Like to the point you call them Demon Seeds from the gates of hell!’. And you’re completely right. I hate those things BUT that doesn’t mean you guys do. I mean it’s okay if you’re a weirdo and like them. lol love you ♥ It’s just I realized that by not sharing cherry recipes that my family loves is well, unfair to the world. You all should be able to share in the deliciousness even though yours truly wont.

Am I harsh on cherries? Nope. LOL I hate ’em and that sucks as they look so good. I mean this dessert, honestly, looks freaking amazing!  And yes, for the record I did try it. I kinda have to. I can’t publish something without ever trying it; that is just well, rude and misleading. What I will tell you is that everyone that has tried this through out the years, LOVES IT! Like to the point it’s almost obsessive. But hey, in the world of chefdom, that’s a huge compliment!

Easy & Super Delicious Cherry Pie Bars!

These types of pie bars recipes have been in my family for generations (i.e., multi-generations peeps). They are faster to make than a traditional pie as there is no rolling involved. These area also portable which meant they were perfect for picnics, cookouts and lunches.  These bars were a huge hit with my dad at the mill.

Cherryrific Cherry Pie Filling

With fresh cherries in abundance right now, it’s the perfect time to whip up this quick & delicious cherry pie filling for dessert tonight!

Okay so here’s the skinny on this recipe. Did I taste it? Yes. Did I like it?  Nope…BUT hear me out. Anyone that knows me knows I HATE cherries. Like we’re talking I’d rather lick a dirty rock than eat one, hate. However, everyone that has tried this filling (who are weirdos and like cherries in my eyes), LOVE it. Actually many rave over it and beg for the recipe.

It’s funny as this recipe takes only about 15 minutes, minus the pitting but I’ll get into pitting them a bit later in this post, and it’s only a few ingredients. But the outcome is incredible…or so I’m told. See I’ve never like cherries, ever. My sister, on the other hand, couldn’t get enough of them. But my hatred for those demon seeds as I affectionately call them doesn’t stop at just the fruit. Oh no; I go full-on anything cherry must burn in hell, hatred. LOL

I would say about the only thing that I actually like that has those little spawns of Satan in it, is my Cherry Chipotle Cola BBQ Sauce. But let’s be real here, chipotle, bbq sauce and cola combined will push the cherry taste to a mild undertone.

Butterscotch Pudding Cream Pie with Toffee Crunch!

Calling all Butterscotch lovers!!!  This is the pie of all pies!  A graham cracker crust with a layer of fudge is the perfect foundation for the most dreamiest, creamiest butterscotch pudding cream filling you’ll ever have!  And HELLO!!!  Toffee Crunch on top!  This is truly a butterscotch lovers dream come true!

Did you ever make something, not sure if others would like it but in your head, you kinda ‘knew’ it would make sense?  Well, that’s where this pie came from. I had been cleaning out my fridge and found a jar of my hot fudge sauce and some butterscotch topping in the way back. They were kinda sitting in the spot where sauces and mystery meats go to die…waaaaaaaaaaaay in the back. Now they were clearly in their wrong fridge spot (which is SUUUUUUUUUUUCH an issue for me).  Everything and I mean EVERYTHING, in my fridge has a designated spot. Milk and juice go in the door with the milk always being closest to the door opening. Ketchup and mustard going on the same shelf as the mayo. Jelly and sweet sauces go to the next shelf. butter goes in one area and the fruits/veggies go into their respective drawers.  God help you if you put a tomato in the meat drawer. OMG, it’s full on war. Well okay, not really but you’ll seriously bug me until I move it.

So that’s kinda where this pie evolved from. Now Mom made a ton of pudding pies growing up and honestly most of hers were from the instant mix. Making homemade pudding from scratch is awesome and the flavor can’t be beaten but I didn’t have a lot of time to make it plus I wanted to clean out my cupboards. You see when we were remodeling the kitchen I had to clean out ALL of my pantries and cupboards – you’d be surprised how much stuff you forget you have! Well at some point in time I bought a bunch of instant pudding mixes. Pudding mixes are a great flavor addition to cakes and cookies but honestly I never really use it for pies.
