Happy Sunday TKW Family!  Brrrr it’s finally cold here in Pittsburgh! We still haven’t had snow yet; just a few flurries. But did you see that Atlanta got something like 9″ the other day. North Carolina as well got hit with snow yet we, who live in the snow belt got squat. Oh trust me, I’m not complaining as folks around here honestly can’t drive in snow. I mean I can get it if you’re new to the area and never had to deal with driving in snow but when folks who’ve grown up here, know the type of snow that we get and still do not get snow tires, kills me. I’m a truck girl but even if you have 4-wheeled drive and your butt is driving with summer tires, my car with snow tires will handle better in the snow. But I digress – ATL and NC – love you guys but you can keep the snow!  Merry Christmas!  LOL

Last week…. God what a blur. When you work in IT, there really is no down time. While most companies slow down around the holidays, IT never sleeps or stops. Even though we’re going into a code freeze (which means no production changes can be pushed through for 4 weeks), this is my super, SUPER busy time. I have to map out my projects for the next year, define my strategies and define the road map. Oh yeah, all the while fitting in my end of the year vacation. But I can’t complain too much as I have a job and more importantly I have a job that I actually really love.

Thursday night was an eventful night in my house. With us both being engineers we can never do things easy. We have to analyze stuff (to death), bring out our calculators, engineering paper and honestly, if we had a whiteboard in the room, that would have been brought out too. You see we’re finally at the point where we can start decorating (and using) the media and billiard room. Which meant we needed to buy a tv. We bought the tv and it was to be delivered the next day. Us, being us, we had to calculate the optimal viewing angle and distance for a 75″ tv. It got bad – like 3 hours bad. We literally broke it down to writing out equations trying to find the tangent and tilt ratios of the tv. 3 hours…

What’s your favorite Christmas cookie?

Tuesday’s Tip with The Kitchen Whisperer – Rolling out Sugar Cookie Dough

To get more evenly rolled out sugar cookies, follow this simple tip! It’s all about that roll and chill!

So confess, how many of you make rolled out sugar cookies other than Christmas? Maybe you’ll make them for Easter but for the most part you make them around Christmas and the holidays. I’m one that only makes them around Christmas as to be honest I just can’t be bothered with that whole rolling out and cutting thing. Yet I’m that same person that LOVES cookie cutters and has like 478 bajillion of them (yes I do have pig cookie cutters too!). I really should make them more often as I love sugar cookies. I think for me it’s the whole decorating part that I like/hate. I don’t have a steady hand so when it comes to that type of decorating I look like a 3-year old trying to color for the first time. I can’t “ice” in between the lines and end up with more icing on the counter and me than on the cookie.

Plus that whole rolling thing… ugh. But today I have a really great tip to help you roll out your sugar cookies and to ensure that the roll is even!

Most recipes tell you to make the dough, wrap and chill. Once chilled you then roll it out. But um, have you ever tried to roll out chilled sugar cookie dough? It’s not exactly simple. Sure it’ll roll but you have to work at it and often it tears or you get uneven rolls. Well that’s where this tip comes in!
Just chill baby!

Happy Sunday TKW Family!  Wow, December already? Man time sure does fly and yet it feels like I’ve accomplished squat. I know it’s all an illusion and in my head but it seems as the older I get the faster time goes. Is that the same with you?  For me/for us our time is consumed by this house and remodeling it. I’ll tell you what guys I will never EVER take on a home remodel job on our own. Maybe if it’s a normal sized room or project but doing 4,000 sqft on our own (and that’s not including the kitchen or the 4 bedrooms) is out of the question. Maybe if I was in my 20’s but now that I’m in my 40’s, hell no. How Chip and Joanna do this for a living is beyond me. But then again they do have a whole crew and we have well, us.

The sad part is, we’re doing all of this work just to put the house on the market. The house wasn’t bad at all but it was dated and needed a facelift. I’ll tell you what, whomever buys this house will have one fantabulously awesome house. If only this house was located closer to my work we’d stay but the commute, even though I work from home the majority of the time, when I do go into the office is wretched. So the past what, 10 days or so I had off work. I didn’t do too much TKW but rather spent my time working on this house.

Are you all done with your holiday shopping? I haven’t even started. It’s funny as Mr. Fantabulous is a big kid when it comes to Christmas. He tells me one day “No honey, don’t get me anything; we’re spending a lot on the house.” to “oh honey, I’d love to have this, this and this!  Oh and this too!” lol Ah my manchild. LOL I love how giddy he gets around the holidays and gets into it. When we’re working on the downstairs he always has on Christmas music and plans our evenings around what holiday cartoon is on.

Do you have a favorite Christmas movie/cartoon?

Happy Sunday TKW Family!  How was your Thanksgiving? Did you survive Black Friday shopping? Our Thanksgiving was really nice; just the two of us, in our pajamas eating like royalty. I did have a minor issue in the kitchen when a 20 pound butcher block board fell smack across the top of my foot rendering me with a hobble for a few days. But eh, the holidays must go on, right? My foot hurts but it’s odd as it hasn’t really turned black ‘n blue where, if you know me, I turn bruise if the wind blows too hard. But I’m a tough ol’ bird I suppose.

As for Black Friday shopping, there is not enough money to get my butt out at the butt crack o’ dawn to stand in line hundreds deep in hopes of getting one of the 4 ridiculously priced items in the store. No thank you. I was perfectly content shopping from the comfort of my bed sipping hot cocoa while the Hallmark channel was on and I was nice and cozy. I’m not one that likes huge crowds of people and let’s face it, people are just flat out rude and mean in those lines. I mean Black Friday is black not for the sales but for the hate and rage it brings out in people. Sorry but I don’t roll like that. I’m not a mean person and I certainly don’t have rage. But some y’all out there that get that way shopping, you need to chill out and apologize for being jerks to those that are genuine and kind that remain classy while shopping. No tv or toy is worth being a butthead.

As for us we did partake in some sales on Black Friday. I bought another Instant Pot but the 8qrt one. OMG did you see the judicious price Amazon had it for?  $81! People that’s INSANE! I bought that one and will give Mama Fantabulous my 6-quart one as she said “I know that one works as I see the foods you create in it!” lol We also picked up 3 office chairs, 3 new desks and 3 floor pads for under our chairs.

Do you make freezer meals with your leftovers?

Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Thanksgiving Gobbler Pizza and the Chunky Shrimp Burgers with Avocado Aioli sauce!

Happy Sunday and happy almost Thanksgiving TKW Family! So are you ready for turkey day? Have your menu planned?  Yeah, me neither! For those of you that are ready, want to come help me? So here’s the thing, even though Thanksgiving is only Mr. Fantabulous and I, I still go all out. Now granted I make things on a much smaller scale but regardless I still make a good bit of food. But I’m at least one up this time of year as I have my turkey already. Which reminds me I need to put it in the fridge to thaw and then brine it for 24 hours. Do you brine your turkey? OMG if not, you really should do it. The flavor is INCREDIBLE!

But that’s about all I have for Thanksgiving. I still haven’t made my cranberry relish. I haven’t made the rolls yet (seriously make THESE!). Heck, I don’t even have the bread for the stuffing or the potatoes!  I did, however, go to Walmart Saturday morning at 8am and OMG the place was a zoo! I mean you would have thought they were giving stuff away! I did get some stuff (like the cream cheese for his cheesecake and mushrooms for the green bean casserole stuffed mushrooms but that’s it. Please tell me I’m not the only one so far behind.

So today I have a TON of work to get done. Yesterday we had friends over which meant all of the TKW work I would get done on Saturday has to get done today leaving me only to worry about this post and the upcoming posts for the week, today. But today I have to try to cram and get everything done in one day. Oh yeah, and get to bed early as I have to head into the office tomorrow which means I’m up at 4am. Ugh… why can’t I be Oprah rich instead of so damn sexy? LOL

Which do you think is better, turkey on Thanksgiving or leftover turkey?
