Cold Tuna Noodle Casserole with Peas and Dill

My Mom’s cold tuna noodle casserole is creamy, packed with tuna chunks, green peas and the brightness of dill! It’s the perfect Friday meal during Lent!

This dish… gosh people this dish was literally served every Friday during Lent in my house growing up. And it didn’t matter if was for lunch or dinner. You see Mom had 4 go-to meals on Fridays during Lent – plain cheese pizza, grilled cheese, baked tuna noodle casserole (which is different than this one) and this dish. Some Fridays we’d have this for lunch and baked tuna casserole for dinner. So needless to say I got “tuna’d” out VERY FAST! When I moved out on my own I quit eating this. There were 3 reasons if you must know why:

  1. I absolutely can’t stand mayo or to touch it. It works in recipes, don’t get me wrong but the actual container of mayo makes me shudder.
  2. I get the heeby-jeebies when mayo is mixed with tube noodles. It’s a specific sound it makes and it makes me cringe. Trust me, I have to seriously be in love with you to make you her macaroni salad. Even now I’m making that “OMG no” face!
  3. I was beyond burnt out from eating it.

It wasn’t until, what, 5 years ago or so when a TKW family member asked if I had any Lent recipes. Immediately I thought of her dishes. And then something happened.. I actually craved this stuff. Since the ingredients are pretty much a pantry stable (fyi… you can use ziti, penne or good ol’ elbow macaroni in this recipe) I decided to make it. I was getting ready to assemble it when I got to the jar of mayo. I seriously had to put the jar down and walk away for a minute. No joke, there’s just something not quite right about it. Yet I have no issues with ranch, sour cream or even when I make homemade mayo. I’m weird, I know. But I sucked it up (not the mayo, God no) and put it in the bowl. Next came the mixing. I knew there was no way around that so I got smart. You’ll laugh (or roll your eyes and think I’m an even bigger dork) but I put my head phones on, turned up my tunes and got to mixing. No squishy noodley sound (as I sit here and shudder as I know that sound!

Now you can eat it right away but it’s best when it chills so into the fridge it went. About an hour or so later it was time for lunch. And just like clock work Mr. Fantabulous came into the kitchen, rubbing his tummy looking to see if I had read his mind and had something prepared. I just smiled, got out the casserole and plated it. Now what was funny was the look he gave me, his plate of food and then me. He said “Ahhhh what’s this??? Did you make macaroni salad??? For real? Wait! Did you gag???”. LOL he knows me so well. I said what it was and why I made it. As we sat down to eat, that first forkful all those wonderful Friday memories came back from my childhood. It literally tasted just like Mom’s. As he ate he said “Oh wow honey, this is really good! How come you never made it before? Oh wait, that’s right you have this issue with mayo and noodles. Yeah, get over it as I want this again… please my darling wife.” LOL

Call it a casserole, call it a salad just don’t call me late for dinner with this!

Oh hello, 3 1/2 day long weekend!  Just look how sexy you are with your carefree attitude, your grilling scents and your tempting dishes. So I don’t know about you but this child is most definitely looking forward to time off. Now while most of you will be chillin’ at some cookouts I’ll be in full TKW mode as I NEED to get at least 2 months of posts typed up and ready to go before I have my surgery on the 9th. Thankfully I have a barrage of recipes done, I just need to edit the photos, type up the recipes and posts. It’s all good though. I can’t just abandon you guys for 2 months.

But this weekend we’re keeping it low-key; no plans, no cookouts. I just want quiet time ya know?  But that doesn’t mean I’m not going to have all kinds of yumminess. I’ll definitely make some burgers and dogs but after making that Caramel Infused Apple Cheddar Chicken Burger, I’m not sure I could eat a plain beef burger again.  It’s so flippin’ good people. And of course Deviled Eggs – gotta have deviled eggs. As for what else, who knows. Maybe I’ll make all of the stuff below and whatever we don’t eat, I’ll make freezer meals so while I’m recuperating, Mr. Fantabulous can eat.

Now there are a ton of recipes to choose from and you’ll see, some use the pressure cooker. Seriously why not use it this weekend?  Save yourself a boat load of time and trouble. You could actually enjoy your party instead of slaving over a grill or oven.  But no worries if you want to grill, go for it. You can make many of these on the grill or better, yet finish them on the grill. And yes you can most definitely make pizza on the grill.

Memorial Day 2016 Dishes

With the majority of us having a long 3-day weekend, 4 if you’re like me and actually took a vacation day, parties and cookouts will be abundant. While I love me a traditional cookout with burgers and dogs (though my dog has to be burnt) I like to mix things up and have different foods.  You just get tired of the same ol’ same ol’. This year when you’re planning your menu break out a few of these killer cookout recipes below!  Some can be prepared ahead of time, some can be made right on the grill.  Heck some can be made in the pressure cooker and then just heated up the day of the party!  SCORE!  More time to actually enjoy your own party versus standing over a stove or bbq all day.  Even I who LOVES being in the kitchen and cooking does enjoy a party where I don’t have to stand there cooking all day.

Let’s dish first about my latest Man Candy recipes – S’mores!  Yeah I know, dude!  SMORE’S!  It’s crispy bacon that’s coated in chocolate, broiled marshmallows and then graham cracker crumbs.  This is a total game changer when it comes to your campfire smore’s!  Next those addictive Butterfinger cookies.  These cookies are chewy, chocolately (is that even a real word?) and loaded with Butterfinger bits.  You will not be able to stop at just one! And next we have those Asian Sticky Ginger Thighs.  OMG they are INSANE!  And all done in the pressure cooker!  So yeah you could totally make them ahead of time and instead of broiling them to get that nice char just pop them on the grill to get that real bbq char look and taste!

Memorial Day 2015 Dishes

With this kicking off the beginning of a long 3-day weekend for a good portion of the US population, I wanted to put together some of my top picks for a traditional Memorial Day cookout. Now there’s nothing wrong with the old standby of burgers and hotdogs but for this girl, I want a variety.  Perhaps a grilled white bean and corn burger.  Or perhaps some finger-sized bbq meatloaf snacks.  And if it rains, you can still have S’mores – make my S’mores brownie batter cheesecake dip!

And while you’re kicking back, relaxing, take a moment and say a prayer and thank you to those that have fought for our freedom to enjoy this day.  Those that gave their lives to keep us safe and out of harms way.  Memorial day while many attribute it to that long 3-day weekend of fun, food and kicking back with friends keep in mind the true meaning of it, please. Memorial Day, originally called Decoration Day, is a day of remembrance for those who have died in service of the United States of America. As President Ronald Reagan said “Today is the day we put aside to remember fallen heroes and to pray that no heroes will ever have to die for us again. It’s a day of thanks for the valor of others, a day to remember the splendor of America and those of her children who rest in this cemetery and others. It’s a day to be with the family and remember. ”
