BBQ Pulled Pork Nachos

We’re talking Nacho Awesomeness here people! Crispy Chips, BBQ Pulled Pork Nachos, Caramelized onions, Cheesy Cheese and a Lip-Smackin’ BBQ Sauce!  Get your Deliciousness on!

Am I the only one that when I hear the word “Nacho” I immediately start to sing “Nacho, nacho man. I want to be a nacho man” either in my head or out loud. I’d say out loud with a caveat of if I’m in public or not but let’s be real, that’s not going to stop me. Life is too short to worry about what other people say or if they roll their eyes. I can actually sing and hey, if my little nacho song (with interpretive chair dance) makes someone giggle or smile, so be it. Why be boring, right?

And boring is something these nachos DEFINITELY aren’t!  I mean don’t get me wrong, I love me some stadium nachos with that bright orange cheese sauce that gets everywhere and takes every ladylike mannerism your Mama taught out and throws it out the window. Please, there is just no dainty way to eat nachos. And so help me God you break out a fork and knife with nachos you just need put in the corner and forced to watch paint dry. I mean c’mon. Nachos are a finger food.

And yes… I actually was out once, at a bar with a girlfriend who literally asked for a fork and knife because she “didn’t want to get her hands her nails dirty since she got them done earlier that day.” Yes for real. I literally sat there for a minute, dumbfounded as both the bartender and I looked at her, mouth agape. I then looked down at my food, looked up at the bartender, got up, grabbed my food and drink and literally moved to the other side of the bar. The bartender met me in my new seat and said, “Please tell me she’s kidding.” I just sat there and said, “Sadly no.” She just sat there said “What???” Me being me just replied, “I don’t know you.” What was even funnier is the bartender handed her chopsticks and said they were all out of clean silverware. I literally spit my drink out when I heard him and saw him hand it to her. That man got one fat tip needless to say.

Tuesday’s Tip with The Kitchen Whisperer – Instant Pot recommendations

So you got an Instant Pot for Christmas (YEAH!!!). Here are some items that I think are a MUST-HAVE to make you a Pressure Cooker Rock Star!

First, WELCOME TO THE WONDERFUL WORLD OF PRESSURE COOKING!!! I know, a bit dramatic but trust me, these things are a kitchen blessing!  I’ve been preaching about the incredibleness (go with that made up word, k?) for years now and thankfully you guys listened!  There are several varieties out there but the overwhelming popular one is the Instant Pot. Rightly so, it’s pretty amazing! I have 3 pressure cookers made by 3 different companies and they all work incredibly well, but this one, this one edges out rest of the other electric ones by a smidge. But now that you have one, let’s talk about additional items that, honestly, you really should have to get the full benefit of pressure cooking!

Santa’s coming, Santa’s coming, Santa’s coming!!! I don’t care what age I am, I still become that 4-year-old little girl at Christmas who giggles at the sight of Santa, leaves cookies and milk out for him and plans her evenings around what Christmas shows are on. I can remember when I was little it was a big deal when the Christmas shows were on. We’d have an early dinner, our home work would be done, baths were had and jammies were on. As soon as 8pm hit, we’d all gather around our console television and watch the classics.  Nowadays we have DVRs, blue-rays and “on demand” but there’s just something a bit more magical about watching it on ‘live’ tv with the rest of the world.

So how many of you are Christmas eve shoppers? Hey don’t fret it – I do it but not for presents. 99.9% of the time I’m that girl at the grocery store who ran out of milk, butter or something important needed for dinner. I actually went to Kohl’s yesterday and was surprised that it was pretty empty. I went in, grabbed what I needed and didn’t wait in line at all. Odd, I know!

This past week I was pretty much down for the count the first 4 days. I had a nasty, nasty head cold/sinus infection that was so bad I actually went to see my dentist as I thought I cracked a root. Thankfully the chompers are all ok and here the pain I was feeling was called “referred” pain thanks to the lovely sinus infection. But what’s odd is that I lost my voice for 2 days. Oh trust me, Mr. Fantabulous wasn’t complaining too much lol

These cookbooks are some of my personal favorites that every foodie needs to have in their kitchen arsenal!  Be a kitchen genius with some of these books!

I seriously love cookbooks BUT I’m very particular about what I buy. I don’t buy them to collect but rather I buy them for inspiration, education, knowledge and deliciousness. With the holidays 2 weeks away I’ve put together my favorite cookbooks of 2017 (and a few prior that still ROCK!) as one of those last-minute-foodie-gifts!  If you’re a foodie or know a foodie then trust me, THESE are the cookbooks that they need (and want!)

So what makes a good cookbook?

First, recipes. No I’m talking GOOD recipes. You know the kind that you put your pieces of paper in the pages to flag it to make. The ones that don’t require 473 steps, 63 ingredients and 8 days to make. Second, creativity. Chicken Soup is chicken soup is chicken soup. I’m all for seeing your Aunt Susie’s prize winning soup recipe but I also want to learn something new, creative and inspiring. Third, photos. We eat with our eyes before we even decide to make a recipe. Truth is, if it looks like garbage, most are less apt to make it. With that, check out some of my favorite cookbooks I’m RAVING over this year!  These are the books every foodie should have!

Happy Sunday TKW Family!  How was your week?  Mine was pretty busy both at work and here at the house. Since we’re both starting to feel better it was time to tackle some of the house chores. I will say this, I will never EVER have 5 acres of property again to maintain. OMG it’s unreal!  Growing up we had 41 acres but there was also 8 of us. This place, I swear it has magic grass and weeds that as soon as you cut them they’ve already grown an inch!  I used to scoff at folks for having fake grass planted but I’m telling you what guys, those people are on to something ingenious!

But I know me, I cannot go without real grass in my yard. I’m a Pennsylvania girl. I need to feel see grass even though it’s hell on my allergies and I don’t like the feeling of it touching my bare feet. But then again I’m that weirdo that hates being barefoot. Like I need socks or shoes on. Yet growing up my sister would never wear shoes. We had about a 900′ driveway that was made out of red dog rocks. Those things were sharp and hurt like the dickens. Dianna would walk barefoot on the driveway to get the mail. One time Dad busted her cutting the grass barefoot!  Stupid, I know!  When he asked why in the hell she was doing that she simply replied “I like the feeling of the cut grass on my toes.” Dad just “If you don’t put shoes on right now you won’t have any toes to feel that grass!”

Unfortunately Mr. Fantabulous overdid it yesterday as his chest started hurting again and it was hard for him to catch his breath again. I’m worried about him. All of his tests have come back negative thus far (which is good) but the tests for that Valley Fever still aren’t back yet. He goes to see the Infectious Disease doctor this week so I’m praying they know exactly what caused his sickness and if he’s on the right treatment path. Today I told him he’s to lie in bed and take it easy. Of course, being stubborn he’s fighting me as there is so much work to get done but his health needs to come first.
