Growing up stuffed peppers were a staple in my house. Since we had a huge garden Mom would grow rows upon rows of peppers – green ones, never the good kind like red, orange or yellow. (I hate green ones). It’s a personal thing – to me they taste more bitter or it could simply just be my inner 7-year old acting up because I hated them then so I must hate them now. Anyway, we’d pick our peppers (and now I’m literally citing ‘peter piper picked a peck of pickled peppers’ over and over in my head.. nice – and you’re welcome for it being stuck in your head now too). Yeah.. as I was saying, we’d pick the peppers and Mom would set at the kitchen table with 3-4 large roasters set up ready to do their magic. She would stuff pepper after pepper after pepper. There was one point she had so many we couldn’t give them away! Now where Mom’s Stuffed Peppers and mine differ is I love adding tomatoes into mine. They add such a rich flavor to filling plus seriously, all those healthy benefits are a huge bonus for me! Tomatoes fit into my lifestyle perfectly – I want deliciousness and healthy!

Hey TKW Family! I have a great no cook/no bake ridiculously easy recipe that honestly could not have been possible without the amazing filters from my friends at Daisey Fresh! How so do you ask? Lemme tell you! So I’ve been using these filters in my fruit and veggie drawers in my fridge for about 2 months now. First off, they are super adorable and you can’t miss seeing them in the drawers. They are neon green and so soft/flexible which is great as I don’t to worry about breaking if it I throw my head of broccoli in the drawer. And more importantly is the filter packets are 100% natural and safe! So if I rip it open by accident I don’t have to freak out or throw away my foods!
So for the longest time I was buying this big bag of baby bell peppers only the thing was we weren’t eating them fast enough. Which meant I was breaking one of my golden rules – I was wasting food as I always ended up throwing about half of them away. Sin, I know! See bell peppers (not the green ones though as I don’t like them), is a new love for me. For years I wouldn’t eat them until I discovered roasted red peppers. WHA??? Where had these things been my whole life??? And since that I was a total bell pepper convert!
Hey hey hey TKW Family! My apologies for not posting a recipe these past few days. Mr. Fantabulous has been ‘thick wif a cowld’. He has a ‘cawf, sniffuls, sneezin,, achy/whiney/I need attention’ cowld. Don’t speak sick-ese? LOL Let me translate. My baby has a cold. He’s sick – has a cough, sneezing like it’s his job, is all achy, or in other words.. feels yucky. Now by know I baby that man beyond the Nth degree. He’s spoiled. No, he’s that word that’s beyond spoiled. BUT I don’t complain as seeing him happy (and knowing he truly appreciates it), makes me happy. Plus he spoils me in return so it’s all good.
Now when he’s thick (sick), it’s not exactly easy on me because he’s one of those patients where he will say “Where are you, come sit with me, why are you in the room?” LOL then I swear he eats MORE when he’s thick than when he’s not but see he eats stuff I never EVER have in the house. Like he craves Ramen noodles. Now not putting that stuff down as God knows that stuff kept me fed during college but my Magic Soup is truly medicinal (it’s my grandmother’s chicken soup recipe – and no, you can’t have it, sorry). Anyway, sorry – he craves that stuff. I think it’s the salt. Well of course I wouldn’t have that on hand though I have about 8 quarts of my soup in the freezer. However apparently it takes too long to defrost my soup and my noodles aren’t the squiggly ones like Ramen is. whinyness here> And I didn’t have some specific brand of grapefruit juice, no banana popsicles – NOT the kind that have cherry and grape in the box! The box must possess ONLY banana otherwise they are ‘tainted’ and he won’t eat them. Yeah, it’s been rough to say the least.
All I can say is THANK YOU NYQUIL! Thank you Thank you Thank you! Should I say “this post is brought to you buy the NyQuil-induced slumber Mr. Fantabulous is in right now” therefore I have free time to type it up”??? LOL
Anyway, if you’re looking for a great wrap plus a ton of protein in your meal, these wraps ROCK! Now I’ve made them 2 ways – baked breaded and baked with no breading. They both rock. They are simple as can be and the flavors are bright and light while totally delicious!
If you’re like me these last few days before Christmas, you’re scatterbrained and moving in a million directions all at the same time. THANKFULLY I’m done with all of my orders however my own personal stuff fell to the wayside. I’ve not bought one gift nor even decorated. With the construction going on right now in the house, it is a full on war zone of construction material crap. It’s so bad that I refuse to have people at my house because there is literally construction stuff EVERYWHERE! So yeah, even though Christmas is my all time favorite holiday it doesn’t show it in my house. Does it disappoint me? Yeah but I’d rather not have stuff up and keep it safe from breakage, dust and debris than have it up only to get ruined. Needless to say I’m a bit of a Scrooge this year.
It wasn’t until this morning did I figure out what I was making for Christmas dinner. So let’s just say it was a mad rush to the grocery store… yeah note to self, never never NEVER go to the grocery store the Sunday before Christmas. OMG talk about a nightmare!!! Anyway, I got all of my stuff ready for the big day. Needless to say the next few days our meals will be quick and simple. Trust me if I could get away with pizza every night I would but Mr. Fantabulous is spoiled and likes pizza plus ‘real food’. Yeah, apparently pizza isn’t real food. It’s that 2nd dinner food you have after you’ve had your ‘real meal’. LOL
This will definitely be one of those quick meals.
It’s that time again to feature SI03 and their Syntrax Protein Powders in another protein packed recipe. Working with these protein powders just seems…natural. They fit perfectly into my baked goods with minimal tweaks. What’s a challenge is when you have the ‘sweeter’/fruity powders and want to incorporate them into a savory, non-treat/sweet dish. The Medical Unflavored protein powder is usually my go-to ‘flavor’ for those types of dishes. Where the challenge lies is using say the Fuzzy Navel Syntrax flavor in a savory dish… until now *grin*
Yeah, look at that Panini packed with fresh roasted turkey, tons of peppery arugula, smokey melted gouda and that dressing. That GLORIOUS Protein Packed dressing! Forget the cucka mayo (that stuff is nasty anyway). Skip the mustard and other spreads. This Protein Packed spread is literally 2 ingredients and while it seems totally simplistic, the flavor is anything but! I literally could not stop eating it! The combination of the Fuzzy Navel Protein powder with fresh organic Apple Butter was pure heaven! Yeah.. apple butter and peach protein powder… who would’ve thought?
