Three Meat Stuffed Italian Banana Peppers

Fall is here in the ‘Burgh which means we have an abundance of banana peppers! Today I’m taking the classic stuffed banana pepper and putting an Italian spin on the meat filling and using my Spicy Banana Pepper sauce as well! Perfect for dinner now and dinner later (freezer-friendly!)

Oh Fall how I love you. The cooler weather, hoodies, farmer’s markets with Fall fruits and vegetables and comfort food. For me I’m all about “stocking up” for the winter food-wise. I’ll make huge batches of soups  or chili for both dinner and the freezer. Pans of lasagna or stuffed shells make great freezer meals and then stuffed “stuff”. Growing up this time of year, early October was our “busy” season in the house. Mom was a canning madwoman between apple sauce, apple chutney, 87 million stuffed cabbages and pretty much everything else she could stuff. She’d regular stuffed green peppers (which I HATED – still do actually) for the family and my one brother she’d make stuffed banana peppers.

First, I cannot stand green peppers. They taste complete different from red/orange/yellow peppers.. they are more bitter. And of course Mom never grew the ‘fancy’ peppers. LOL And for the banana peppers my brother would get those from a neighbor and only he would eat them. I never had them as I was a wuss and thought they were hot. Yeah I know, idiot. LOL

It wasn’t until years later did I try one at a restaurant and was like “Whoa!  These are awesome!”. Now it did take me a few tries to get the heat level right as I will tell you this, the first time I made them they were so hot that I actually had a blister form in the roof of my mouth!

These have just a hint of heat with amazing Italian flavors!

From the time I was 3 I can remember spending every Friday night either at my high school football stadium or at the away game. Having 4 older brothers that all were deeply-seeded in football we lived and breathed high school football. I can remember being an honorary member of the team wearing the smallest jersey they had (which was the length of a nightgown on me) and a scuffed up helmet that wobbled on my head. I would stand on the bleachers sipping my hot cocoa, cheering on my South Park Eagles as loud as I could and doing all of the cheer moves the cheerleaders were doing. I LOVE High School football! It’s what I was raised on. When I got old enough I joined the band for two reasons – because I loved to play the sax and because I got to be at the games.

Growing up in Pittsburgh there were a few things that you were born into.  You were born with the notion that all salads come with fries on them.  You were born into a language of it’s own – Pittsburghese.  And you were born into Pittsburgh Football nation. You were a die-hard black ‘n gold football fan.  And lastly, you were born into serving killer food during those football games. Being that house that hosted the games was a right of passage. Some folks waited decades to become the house where we gathered.  Some just impressed right out of the gate and they took over the hosting.

So for the longest time I was buying this big bag of baby bell peppers only the thing was we weren’t eating them fast enough. Which meant I was breaking one of my golden rules – I was wasting food as I always ended up throwing about half of them away. Sin, I know! See bell peppers (not the green ones though as I don’t like them), is a new love for me. For years I wouldn’t eat them until I discovered roasted red peppers. WHA??? Where had these things been my whole life??? And since that I was a total bell pepper convert!

Southwest Turkey Burgers with Roasted Tomatillo Salsa Verde

As I get older I find myself becoming less and less of a ‘beef’ eater and leaning more towards turkey/fish or veggies.  Don’t get me wrong – I LOVE me one fat juicy burger, a slab of ribs, bacon… well I’ll never divorce bacon but sadly beef doesn’t always agree with my stomach.  But if you’ve ever cooked with ground turkey, due to the low fat content, it can dry out rather fast. Now the best/healthiest ground turkey to buy is the one that is all ground white meat but again it can be dry so what I found is a healthy balance of 80% ground white turkey and 20% ground dark turkey meat.  The dark meat is where you truly get that rich full-bodied flavor and since it’s such a low fat content I don’t have to worry too much.  Plus you know me, everything in moderation.  So when I bought 5 pounds of my ground turkey mixture I knew I had to make me some mean burgers with it.  Since I had just made a batch of my awesome Roasted Tomatillo Salsa Verde I opted to go with a Southwestern flare.  So today you’re getting my Southwest Turkey Burgers with Roasted Tomatillo Salsa Verde recipe which seriously I ate every single day for a week and never once got tired of them because they are THAT amazing and you need to make these TODAY.  Yes that was a run on sentence.  Yes, it was intentional.  lol

It’s funny how turkey or chicken burgers, which once were the hottest new thing in food, are now part of the norm like ‘regular’ burgers.  Growing up we had beef burgers, maybe deer (gag – sorry but I grew up in a family that hunted and I hate venison) and turkey was meant for holidays only. There was no thought of ever grinding turkey meat up as a burger but who ever thought of it.. GENIUS!
Know what else is genius? THIS BURGER! Seriously, it’s one of my top 5 favorite!
